Job Description
The Butchery Specialist is responsible for driving profitability, operational excellence, and quality standards across retail butchery operations. This role focuses on improving gross profit, increasing sales performance, and ensuring best-in-class production, merchandising, and food safety practices.
Key Performance Areas

Increase retailer butchery gross profit and sales through effective operational strategies

Develop optimal ranging plans and menu designs aligned with customer demand

Create, standardise, and cost recipes to support profitability and consistency

Manage stock control, ordering, and inventory accuracy

Plan and coordinate production to maximise butchery productivity

Implement effective merchandising and visually appealing product displays

Ensure strict adherence to hygiene, food safety, and quality standards

Support project managers with store revamps and new store openings

Advise on the selection, layout, and maintenance of butchery equipment

Deliver training and support to retailers on Fresh Studio systems and processes

Identify emerging food and meat trends and implement them in-store
Minimum Requirements
Skills, Knowledge and Experience

Matric qualification

Relevant butchery-related qualification
-
Minimum of 3–5 years’ experience in butchery management

Valid driver’s licence

Strong interpersonal and communication skills

Self-motivated with the ability to work effectively within a team

Excellent training, coaching, and development skills

In-depth knowledge of the meat trade and current market conditions

Sound financial and business acumen
