Parmalat Vacancies – Production Manager Process Recipe
Parmalat, a member of the Lactalis Group, is seeking a dedicated and detail-oriented Production Manager Process Recipe to join the team at our Bonnievale Plant in the Process (IWS) department. This role is responsible for managing and controlling daily process cheese recipe formulation, including raw material management, in-process adjustments, quality control, and the coordination of floor operations to maximise yields, reduce losses, and uphold product quality.
Key Responsibilities
Raw Material Management

Order raw materials from external and internal sources including Lactalis plants, stores, and rework areas

Allocate raw materials according to lab test results, considering factors such as fat, protein, moisture, salt, and pH

Use BPCS and Solver & Batch file systems to manage bookings and material traceability

Classify raw materials for optimal use in recipe formulation and monitor key metrics
Process and Recipe Adjustments

Analyse funnel graphs and apply necessary adjustments using Food Scan results
-
Modify recipes for improved efficiency and cost without compromising quality

Ensure all process equipment is properly calibrated for accurate measurements

Continuously test and adjust recipes based on production performance and yield analysis
Cheese Pools and Production Oversight

Manage daily operations of Cheese Pools and Rework Pools

Supervise daily production activities to maintain targets and quality standards
-
Maximise recipe yields while ensuring traceability and compliance with food safety regulations
Inventory and Loss Control
-
Conduct weekly stock counts and daily cycle counts, identifying and addressing any deviations

Implement corrective actions to minimise product and material waste
-
Track and manage inventory through BPCS and maintain tight control over losses
Quality and Food Safety Compliance

Ensure all products meet company food safety and quality standards

Maintain compliance with HACCP, ISO22000, GLP, GMP, and NOSA standards
-
Drive continuous improvement initiatives to elevate food safety and production efficiency
-
Provide training and coaching to ensure correct implementation of recipes and food safety protocols
Team and Operations Management

Lead, guide, and discipline team members to meet performance and behavioural standards
-
Monitor and evaluate employee performance, set targets, and foster development

Ensure that SOPs are in place and adhered to across all operational areas

Participate in departmental budgeting and contribute to operational planning and forecasting
Reporting and Documentation

Compile and present reports on yields, budget performance, savings plans, and productivity

Conduct daily OEE checks and update production and material usage reports
-
Track opportunity cheese, maintain cheese scorecards, and perform root cause analysis

Ensure all documentation, check sheets, and control logs are completed and filed correctly
Maintenance and Compliance

Ensure all maintenance job cards are actioned promptly and facilities are maintained per Lactalis standards

Manage workforce scheduling using Kronos and ensure compliance with labour and safety regulations

Proactively develop and implement procedures that improve operational efficiency and compliance
Minimum Requirements

National Diploma or BTech in Food Technology or a relevant qualification
-
Minimum of 5 years’ experience in a management role within FMCG manufacturing
-
At least 3 years’ experience in process cheese production
-
Strong knowledge of cheese manufacturing, quality systems, and Good Manufacturing Practices
-
Experience with BPCS and strong computer literacy across Microsoft applications
-
Solid leadership, communication, and problem-solving skills
-
Ability to work independently in high-pressure environments and extreme conditions

Willingness to work shifts, weekends, public holidays, and overtime when required
